Mariano’s Report On The Gourmia Sous Vide Pod

When any new advance comes along it usually takes a while before an affordable version hits the market. Microwaves cost a fortune when they came out. Same with cellphone? Remember the kind of price tags on the first flat screen TVs? And now you can get great models of all those things at highly competitive prices. If that’s what the Gourmia Sous Vide Pod is trying to be – an affordable sous vide machine – it’s a resounding success. Let’s take a look and see whether there’s a compromise in quality or experience that comes with the savings.

Getting Started

The first thing I noticed about the Gourmia Sous Vide Pod is that it comes in 3 different colors – black, white, and bronze. It also has the most decorative style of any sous vide machine I’ve seen with a curled handle. It’s a bit like steam punk meets the renaissance. Very different from the minimalist or industrial design approach of other immersion circulators. In the end, how it performs is more important than how it looks, but kitchen and personal style can be a deciding factor so I thought it was worth mentioning that it’s not really my taste.

Here’s a somewhat cheesy how-to video that Gourmia made. I can’t help getting a chuckle when I see the “cool” models they used for the dinner party shots. Poking fun aside, it gives a quick look at sous vide in general and a useful overview of the Gourmia Sous Vide Pod.

As usual, you need to be close enough to an outlet so that the Gourmia Sous Vide Pod can get the juice it needs to run. The work surface also has to be heat safe, so stay away from direct use on marble or Corian.

The Clamp
It’s the most stylized part of the Gourmia Sous Vide Pod and gives the unit its unique profile. Compared to the minimalist designs of its pricier competition you could say this is either a good thing or a bad thing. But does it work well? Yes. It operates a bit like a curling iron. It’s spring action provides the gripping tension. All you have to do is open it and close it onto your pot or container.

Functionality
It has a nice large LCD display. It’s simple with only two buttons – one for power/start and the other to toggle between °F and °C. It’s preset to °C so you have to turn it back to °F when you switch it back on. There’s a wheel below the display to roll the temperature up and down. Once you have chosen the temp you want, press and hold the power/start button for a few seconds and it will heat up the bath to that temp. In short, it’s a couple of buttons and a dial. As long as you have a separate timer, that’s really all you need.

Temperature Control
Gourmia has come up with an exclusive ACT system. That stands for Active Control Thermostat. It uses a highly sensitive thermometer and works in combination with something they call the “active temp monitoring system”. It’s designed to measure and maintain the water bath to +/- 0.1° of accuracy. As far as sous vide circulators go, this isn’t boasting any performance you wouldn’t find in the main competition – but it’s doing it for a significantly lower price.

Capacity
Gourmia recommends usint the Sous Vide Pod on pots ranging from 3-5 gallons. That’s in the lower range of comparable immersion circulators. It’s probably worth thinking about what scale of cooking you normally do. If you want to make dinner for 20, in my opinion a more powerful immersion circulator would be more reliable. I’m not saying this couldn’t handle the job, I just prefer to understress my appliances rather than pushing them to their max. Which brings us to…

Circulation
At 1.5 gallons/minute, the Gourmia Sous Vide Pod is capable of managing the water in its spec range. It’s not as powerful as some immersion circulators that boast as much as 3 gallons/minute, but more doesn’t always mean better. For most home kitchen needs, this unit has ample power cook evenly and without hot and cool spots.

Product Support
The warranty is 1 year. Pretty standard these days. The manual is really too minimal. There’s barely any information in it. What’s more, there’s no cookbook or guide included. Not the biggest problem in the world as there are plenty of sous vide guides available online. But if I was the manufacturer I would have the decency to provide my customer with some recipes to get started with sous vide. After all, it’s a new kind of food prep technique for most people. Is this really where they’re passing on the savings to the customer?

Final Thoughts
I’m going to invent a brand new turn of phrase here, so prepare to have your mind blown. You get what you pay for. Yes, I’m going to be that original. Now don’t get me wrong. This is not some hunk of junk by any means. It just doesn’t have the build quality of the other immersion circulators I reviewed. It’s also somewhat clumsily designed, not as easily adaptable to different pots, and doesn’t look anywhere near as cool. This is a perfect way to start out with sous vide. It’s affordable and functional. If working with it leads you to discover that you love the magic of sous vide cooking, there’s lots on the market to step up to when you’re ready.
