Mariano’s Report On The Sansaire Sous Vide Machine

This was the immersion circulator that ran neck and neck for first place with the Anova One when America’s Test Kitchen did their review a while back. That’s high praise indeed and well deserved. This is a top quality immersion circulator. It’s well made, accurate, and easy to use. It doesn’t have the bells and whistles that some sous vide machines are offering these days, but simple is sometimes the best. It’s also been around a while and that’s given Sansaire the chance to work out the bugs from their Kickstarter origins and continue to develop this excellent product. But enough hype. Let’s take a closer look at the Sansaire Sous Vide Machine!

Getting Started

Here’s a nice little video Sansaire made. It’s unboxing the Sansaire Sous Vide Machine, setting it up, and cooking a duck egg to 67°C. Check it out.

You want to be careful about the surface you choose. Anything that’s heat sensitive should get some protection with a trivet. It’s also easily solved by just doing it on your stovetop, especially if you’re using a stockpot anyway. Just make sure you’re close enough to an outlet that you can plug it in.

It’s a sleek looking unit that measures 4” x 15”. Like all immersion circulators, it can be stored in a drawer or on a shelf rather than the big water bath units that are the size of a small microwave. I do love the simple shape and overall appearance. The housing is all plastic which can be more damage prone, but the unit itself feels solid and well made.

The Clamp
Well, I wouldn’t exactly say clamp. It’s really more of a clip. But the reality is you don’t need to “clamp” it to the side of the pot at all if you don’t want to. If the water level is low enough you can simply stand the unit in the water and let it run. I’ve heard of people using it in a sink! Just make sure your water levels are ok as the top portion is not supposed to be immersed in water. That’s a definite no-no. Another advantage is that you can adjust the Sansiare’s clip to two settings. One attaches to thinner pots and another for something thicker like a cooler. A nice feature for versatility.

Very simple. And that’s a good thing. There’s a digital display on the top of the Sansaire Sous Vide Machine. It’s clear and easy to read. There are three buttons. Power, target temperature, and one that toggles between F° and C°. There’s a ring around the outside that you turn to select the temp you want. Just set it and it’s game on. If the power goes out, it will remember your last temp setting. The only catch is you still have to turn it back on.

Temperature Control
It’s 1100W and heats up in around the same time as other immersion circulators. It’ll take you maybe 15 minutes to get a pot ready that’s large enough to cook 4-6 steaks. Much longer – lie an hour – if you’re going the full 5 gallon route in a big cooler to cook the side of a cow. You can set it in increments of 0.1° – a nice touch for the perfectionist in all of us.

Sansaire says their machine can handle up to 6 gallons. That’s a lot of space for cooking. We’re talking one big ol’ cooler full of meat here. I’m guessing most home cooks would rarely need that kind of capacity, but it’s nice to know it can handle it if the boys are comin’ in hungry. Since containers vary, the real guide here is to follow the instructions for maximum and minimum depths.

By pumping 3 gallons of water every minute, the Sansaire Sous Vide Machine is able to keep double that amount at a stable temperature. It’s strong enough to ensure you don’t get lingering hot and cool spots, too. There’s minimal jostling from the circulator so you can drop eggs right into the water bath to cook.

Clean Up
Sous vide is a low maintenance way of cooking. That’s one of the method’s most attractive features. The Sansaire Sous Vide Machine is no exception. It’s a little fiddly to access the innards for cleaning. There’s a cover that pops off on the back revealing the heating coils and circulator. It’s also tool-less, which is nice, so no need to have a screwdriver handy. I’d prefer if the housing slid off completely for total access, but you can get a brush or cloth inside to get the job done. It has holes in the bottom so it drains very quickly.

Product Support
There’s a 1 year warranty that covers defects and malfunctions. As long as you don’t cause the issue by misuse, Sansaire will replace it including shipping. Just remember that it’s not waterproof. The top part of the circulator has sensitive electronics, so don’t submerge it in water and you should be all good. When I checked out reviews of the customer experience with returns, the feedback has been positive. There’s also a manual online just in case. I couldn’t find it easily on their site, so I just searched Sansaire Sous Vide Machine Manual and it took me right here manual
